Happy hump day, everyone! What’s for dinner?
The middle of the week can be daunting. Leftovers from the weekend ran out and maybe grocery shopping just didn’t happen. At our house, that occurs more than I’d like to admit. But, I’ve learned to keep some staples on hand and this quick, simple dish has become a go-to. And it’s husband approved!
Easy Teriyaki Chicken
Here’s what you’ll need:
- 1 lb boneless chicken breast, or chicken tenders
- 2 cups white rice
- 1 Tbsp minced garlic
- 1/4 cup green onion, chopped
- Olive oil
- Teriyaki sauce
- 1/3 cup soy sauce
Step 1: Place chicken breast or tenders in skillet and cook through. Prepare rice according to package instructions.
Step 2: Once chicken is cooked, drizzle on teriyaki sauce (amount to your liking). Cover and let simmer for 2-3 minutes, flipping them once to make sure sauce covers.
Step 3: Remove chicken and set aside. Add a dash of EVOO to the skillet and saute the green onions and garlic until onions are tender. Add the rice and mix together.
Step 4: Add the soy sauce on top of rice mixture and stir until coated.
Step 5: Dish up rice on plates and place chicken on top. Serve immediately!
The best part about this meal is the ease of modification. Add mushrooms to the rice, substitute teriyaki with a favorite sauce, use tofu – anything to fit your diet!
