Currently: staring out my window at gray skies, bare trees and almost-there green grass while trying not to consume all the jelly beans and Easter treats sitting in our house.

Speaking of which, did Easter sneak up on anyone else?  March really has been madness!

I love being in the kitchen for holidays – a friends or family get-together is the perfect excuse to try any new recipe.  And when you search “Easter ideas” on Pinterest, it’s impossible not to test at least one.

So, introducing Chocolate-Dipped Peeps!  Originally found at Tastes Better from Scratch – click here for her original recipe – she’s so fun!

Even if you don’t enjoy Peeps, these are so simple, colorful, festive and downright cute for a table display.

Here’s what you’ll need:

1 package Peeps – any color!
1/2 cup chocolate chips *I chose dark chocolate
Sprinkles
Wooden skewers
A few mini mallows (optional)

First, line a baking sheet with wax paper and skewer the bunnies you’d like covered in chocolate.  Then, melt the chocolate in the microwave, stirring every 20-30 seconds until completely smooth.  Arrange your prep space and get to work!

I chose to dip my skewered Peeps first and then added half a mini mallow for a “tail”.

Next, I only dipped the bottoms of the remaining Peeps and coated them in sprinkles.

You can do the whole batch one way, or mix and match by following the original recipe. Arrange on a platter, or in the Peeps box and enjoy a fun Easter treat!  
How easy was that?!

One has already disappeared from this herd, and I have to say – delicious!  The bitter dark chocolate is a great contrast to the sugary Peep and they are fun to eat.
