Winter Sundays in our house are always filled with football on TV, sweatpants, and comfort food. We have numerous casseroles on the rotation list, but one of our quick, go-to dinner options are meatball subs. With four ingredients, two of which are typical cupboard staples, this recipe couldn’t get much easier.
Homemade meatballs would send this recipe into overdrive, but when you need something simple and hassle free, frozen or meat market options work great.
Here is what else you’ll need:
Fully cooked for frozen meatballs – 6-8 for two subs. 3 to 4 usually fit on one bun
1 jar marinara sauce – I like to use Prego Roasted Red Pepper & Garlic for added flavor
1 bag shredded mozzarella cheese
Step 1: Pre-heat the oven to 400 degrees
Step 2: Place the meatballs in a large saucepan and pour marinara sauce over top –
Step 3: Split hoagie buns open, spread them with butter if desired, and toast in the oven. Remove when slightly browned and crisp, about 8 to 10 minutes.
Step 4: Spoon out meatballs and place on buns (3 to 4) – spoon on excess sauce
Step 5: Top meatballs/sauce with desired amount of mozzarella cheese
Step 6: Stick sandwiches back in the oven to melt cheese; remove when hot and bubbly
Serve immediately and open face. Grab a fork and dig in!
This is a great meal solution for busy weeknights – or a cold winter Sunday like today.
